#ed_op#DIV#ed_cl#Do people want dessert-like recipes, or any type of favourite recipe?? Here is one of my favourite potato recipes. Gluten-free too, for those with intolerances! A word of caution: don't double the recipe, even though it is very tempting to do so (they are soooo good)! They won't turn out right if you do.#ed_op#/DIV#ed_cl##ed_op#DIV#ed_cl# #ed_op#/DIV#ed_cl##ed_op#DIV#ed_cl##ed_op#FONT size=2#ed_cl##ed_op#STRONG#ed_cl#Lemon Roast Potatoes#ed_op#/STRONG#ed_cl##ed_op#BR#ed_cl#Serves: 8 #ed_op#/DIV#ed_cl##ed_op#DIV#ed_cl##ed_op#P#ed_cl##ed_op#STRONG#ed_cl##ed_op#EM#ed_cl#Ingredients #ed_op#/EM#ed_cl##ed_op#BR#ed_cl##ed_op#/STRONG#ed_cl#4 pounds potatoes -- peeled#ed_op#BR#ed_cl#1 cup water#ed_op#BR#ed_cl#1/2 cup lemon juice#ed_op#BR#ed_cl#1/3 cup olive oil#ed_op#BR#ed_cl#3 cloves garlic -- minced#ed_op#BR#ed_cl#2 teaspoons salt#ed_op#BR#ed_cl#2 teaspoons dried oregano#ed_op#BR#ed_cl#1 teaspoon pepper#ed_op#/P#ed_cl##ed_op#P#ed_cl##ed_op#STRONG#ed_cl##ed_op#EM#ed_cl#Directions#ed_op#/EM#ed_cl##ed_op#/STRONG#ed_cl##ed_op#BR#ed_cl#Cut potatoes lengthwise into thick wedges (I do about 8 wedges/potato); place in 13 x 9 inch baking dish.#ed_op#BR#ed_cl#Whisk together water, lemon juice, oil, garlic, salt, oregano and pepper; pour over potatoes, turning to coat evenly.#ed_op#BR#ed_cl#Bake in 325F oven, gently turning occasionally to keep potatoes well moistened, for about 2 hours or until potatoes are very tender and most of the liquid has evaporated. #ed_op#/P#ed_cl##ed_op#P#ed_cl#Per Serving: 266 Calories; 9g Fat (30.4% calories from fat); 5g Protein; 43g Carbohydrate; 4g Dietary Fiber; 0mg Cholesterol; 548mg Sodium.
